Agitator System

In the agitator system, sucrose spheres (hard candy) are dissolved in a stirred tank of water, and the effects of agitator speed, impeller design, and the presence of baffles on the corresponding interfacial mass transfer is determined. The students develop mathematical models to relate the change in candy mass to pertinent mass transfer properties such as mass transfer coefficient, interfacial area, liquid-phase solute concentration, solute saturation limit, etc. They use these models to determine values of the mass transfer coefficient during your experimental runs.  Their final report also includes plots of mass transfer coefficient vs. time for each impeller and agitator speed.
